Russet potatoes (also known as Idaho potatoes)

Our Lotbinière cheese, grated

Preheat oven to 425°F (220°C).
Meanwhile, cut potatoes into sticks, coat with a little olive or vegetable oil and season. Place on a baking sheet and bake for approx. 25 minutes, or until golden and crisp. Turn halfway through cooking.
While the potatoes are cooking, prepare the Béarnaise sauce.
Meanwhile, prepare the crab according to your fishmonger’s instructions.
Finally, grate the Le Lotbinière cheese.
Assemble poutines by placing fries, crab, Le Lotbinière cheese and bearnaise sauce in bowls.
Sprinkle with chives, close your eyes and enjoy!
