Preheat the oven to 220° C (425° F).
Meanwhile, cut the potatoes into sticks and brush them with a bit of olive or vegetable oil. Place on a baking sheet and bake for about 25 minutes or until golden brown. Turn halfway through cooking.
While fries are cooking, reheat homemade or store-bought spaghetti sauce.
Assemble poutines by spooning a dollop of Brins de Gouda over fries and topping with a generous portion of spaghetti sauce.
Sprinkle with chili flakes.
