Sweet potatoes

Preheat oven to 425°F (220°C).
Meanwhile, cut sweet potatoes into thin sticks and coat in a little olive or vegetable oil, season with salt and pepper.
Place on a baking tray and bake for around 25 minutes, or until golden and crisp. Turn halfway through cooking.
Next, prepare the chipotle BBQ sauce.
When everything is ready, serve the poutines by placing the sweet potato fries, chipotle BBQ sauce, Brins de Gouda and green onions in bowls.
