Seafood Poutine

Ingredients

Baby potatoes

Olive oil

Your favourite seafood (prawns, snow crab, etc.)

Le P’tit Bonheur cheese cubed

Salt and pepper to taste

3 tbsp. of butter

3 tbsp. of flour

2 cups of milk

1 pinch of nutmeg

Béchamel sauce

Instructions
  1. Preheat the oven to 375 °F (190 °C).

  2. Meanwhile, cut the baby potatoes in half, coat them with a bit of olive oil, and season. Place on a baking sheet and bake for about 25 minutes or until tender. Stir frequently.

  3. While the potatoes are cooking, prepare the béchamel sauce by first melting the butter in a saucepan.

  4. Add the flour and mix well with a whisk. Cook for about 1 minute over medium heat, stirring constantly.

  5. Add the milk while continuing to whisk. Bring to a boil over medium-high heat. Add the nutmeg and season to taste.

  6. Add the seafood to the hot sauce and stir.

  7. Cut our Le P’tit Bonheur cheese into cubes.

  8. When everything is ready, assemble the poutines by laying the baby potatoes, cheese cubes, sauce and seasoning to taste on the plates.
