Hollandaise sauce
Eggs
Preheat oven to 375°F (190°C).
Meanwhile, cut baby potatoes in half and coat with a little olive oil and spices. Place on a baking sheet and bake for about 25 minutes, or until tender. Stir frequently.
While the potatoes are cooking, cook the sausages in a frying pan over low heat for about 15 minutes, turning every 3-4 minutes.
Meanwhile, cut the onion, green bell pepper and mushrooms into strips and cook in the same pan as the sausages.
Then grate La Patte Blanche and set aside.
Prepare the hollandaise sauce.
Finally, cook the eggs (mirrored, turned, well-cooked… it’s up to you!).
Assemble poutines by placing baby potatoes, sausages, vegetables, grated cheese and hollandaise sauce in bowls.
