Cheese and Grizzly Smoked Salmon Waffles

Waffles are perfect for breakfast, brunch or even a quick lunch. Now, imagine waffles made with our Seigneur de Tilly cheese and Fumoirs Grizzly products. When it comes to sweet and savoury, why compromise?

1 cup of flour

2 tsp. of baking powder

1 tsp. of soda

½ tsp. of salt

2 tbsp. of sugar

1 cup of sour cream

½ cup of milk

1 egg

2 tbsp. of melted butter

4 tbsp. of chopped fresh dill

½ cup of grated Seigneur de Tilly cheese

200 g of Grizzly lemon-dill smoked salmon


3 tbsp. of mascarpone cheese

3 tbsp. of sour cream

Zest of one lemon

Juice of ½ lemon

Peppercorn to taste

  1. Mix dry ingredients.

  2. Mix wet ingredients.

  3. Combine flour and wet ingredients with melted butter.

  4. Add dill and cheese and mix well.

  5. Pour about 1 cup of batter into a waffle iron and cook for 3–4 minutes or until waffle is done.

  6. Prepare topping: combine mascarpone, sour cream, lemon zest and juice. Season to taste with salt and pepper.

  7. Top waffles with mascarpone filling and smoked salmon, and garnish with fresh herbs.
