1 cup of flour
2 tsp. of baking powder
1 tsp. of soda
½ tsp. of salt
2 tbsp. of sugar
1 cup of sour cream
½ cup of milk
1 egg
2 tbsp. of melted butter
4 tbsp. of chopped fresh dill
½ cup of grated Seigneur de Tilly cheese
200 g of Grizzly lemon-dill smoked salmon
3 tbsp. of mascarpone cheese
3 tbsp. of sour cream
Zest of one lemon
Juice of ½ lemon
Peppercorn to taste
Mix dry ingredients.
Mix wet ingredients.
Combine flour and wet ingredients with melted butter.
Add dill and cheese and mix well.
Pour about 1 cup of batter into a waffle iron and cook for 3–4 minutes or until waffle is done.
Prepare topping: combine mascarpone, sour cream, lemon zest and juice. Season to taste with salt and pepper.
Top waffles with mascarpone filling and smoked salmon, and garnish with fresh herbs.
