Preheat oven to 400 °F (205 °C).
Meanwhile, cut potatoes into quarters and coat with lemon juice, oregano, olive oil and pepper. Place on a baking sheet and bake for about 25–30 minutes or until tender. Stir frequently.
Prepare the béchamel sauce.
Cut the onion into thin strips, the black olives in half and the tomatoes into cubes.
