Veggie Sandwiches

Back to school means back to lunch boxes! We have prepared a great veggie sandwich, colourful and full of vitamins. Enjoy your lunch!

4 Kaiser rolls

1 tomato, thinly sliced

1 package (400 g) Bergeron Inspiration cheese slices

1 cucumber, sliced

1 carrot, grated

Alfalfa or other sprouts, to taste

1 red onion, minced

The juice of 1½ limes (3 tbsp)

1 tbsp avocado oil

1 tsp. salt


225 g (8 oz) soft tofu

65 g (1/4 cup) plain Greek yogurt

80 g (1/3 cup) mayonnaise

The juice of ¼ lime (2 tsp.)

1 celery stalk, chopped

1 to 2 tablespoons fresh cilantro, chopped

  1. Pickled Red Onions: In an airtight container (e.g., Mason jar), combine red onion, lime juice, avocado oil, and salt. Marinate in the fridge for at least 1 hour and up to 24 hours.

  2. Tofu Spread: In a bowl, mash tofu with a fork. Add yogurt, mayonnaise, lime juice, celery, and coriander. Mix well.

  3. Split the bread in half. Spoon tofu spread on the crumb of the bottom four halves. Then add 1 slice of tomato, 3 slices of Gouda cheese, 3 slices of cheddar cheese, a few slices of cucumber and 1 tbsp pickled red onions. Garnish with grated carrots and alfalfa. Close the buns and enjoy!
