2 ½ cups of all-purpose flour
1 tsp. of salt
1 tsp. of baking powder
1 tsp. of sugar
½ tsp. of chili powder (optional)
½ cup of melted butter
1 ½ cups of milk
2 large eggs
2 cups of drained grated zucchini
1 cup of Louis Cyr or Mild Gouda
2 tbsp. of finely chopped chives
Preheat the oven to 400 °F (200 °C).
Using a whisk, combine the flour, baking powder, chili powder, salt, and sugar in a large bowl.
In another bowl, whisk together the butter, milk, and eggs.
Pour the wet ingredients into the dry ingredients. Mix as little as possible.
Gently fold zucchini, chives, and cheese into the batter, reserving some cheese for garnishing the tops of the muffins.
Pour the mixture into 12 muffin cups. Decorate with the remaining cheese.
Bake for about 15 minutes, until golden on top and a toothpick inserted in the centre comes out clean.
Cool before serving.
