Apple & Cheese Muffins

1/3 cup butter, softened

2 eggs

3 tbsp. sugar

2 cups flour

1 tbsp. baking powder

1 cup milk

1 cup Le Seigneur de Tilly cheese, grated

2 cups (500 ml) peeled apples, grated

  1. Grate cheese and apple

  2. Preheat oven to 400°F

  3. In a bowl, add the butter, then the sugar and mix for a few minutes (the final texture must be light)

  4. Add eggs one at a time

  5. Add flour, baking powder and milk and mix

  6. Add apples and cheese, mix again

  7. Transfer mixture to muffin tins
    You can grease the surfaces or use paper baking trays
    Fill cavities 2/3 full

  8. Bake for approximately 15-20 minutes, until the top begins to brown and a toothpick inserted in the center comes out clean.

  9. Note: Refrigerate for up to 1 week, or freeze for up to 1 month
