Ingredients

  • About 15 store-bought mini tart shells (pastry cups or phyllo)
  • 2 ripe but firm pears
  • 15 ml (1 tbsp) lemon juice
  • 30 ml (2 tbsp) butter
  • 30 ml (2 tbsp) maple syrup
  • 1.25 ml (1/4 tsp) salt
  • ½ package (85 g) Bergeron Louis Cyr cheese, cut into very small cubes
  • 60 ml (¼ cup) toasted pecans, chopped
  • Fresh thyme leaves (optional)

Preparation

  1. Preheat and re-crisp the tart shells if needed, following package directions. Let cool.
  2. Core the pears, cut into small dice, and toss with lemon juice.
  3. In a skillet over medium-high heat, melt the butter, then add the pears, maple syrup, and salt.
  4. Cook 7 to 8 minutes, until tender but still slightly crisp. Let cool slightly.
  5. Fill the tart shells with the caramelized pears, then add the Louis Cyr Bergeron
    cheese cubes and pecans.
  6. Garnish with fresh thyme, if desired, and serve right away.
