Discover the Louis Cyr 2-year. These cheese celebrate the Bergeron character and the exceptional milk from the northern Quebec terroir. Made from the milk of cows fed with dry hay, only our best wheels are selected to age for up to 2 and even 4 years. This long aging process allows the cheeses to develop aromas of burnt caramel, a texture that is both brittle and creamy in the mouth, in addition to crystals, a sign of successful and high-quality aging. This cheese was named Louis Cyr in honour of the Quebec strongman. A true French-Canadian icon, he used his weightlifting and record-breaking feats to make Quebecers understand that they were not small and that they could dream big.
