4 ripe but firm peaches
Olive oil
1 piece (170 g) Bergeron Louis Cyr cheese
1/2 baguette
Fleur de sel or sea salt
Honey
Fresh thyme
Preparation
Cut the peaches in half, remove the pits, then slice each half into 4 wedges.
Preheat a grill pan or barbecue to high heat. Lightly oil the pan or grill grate, then sear the peach slices for a few seconds on each side to mark and flavour them. Set aside.
Preheat the oven to 200 °F (400 °F). Grate half of the Bergeron Louis Cyr cheese, then crumble the remaining half by hand.
Cut the half-baguette into thin slices and arrange them on a baking sheet.
Brush one side of each crostini with olive oil and sprinkle with fleur de sel.
Toast in the oven for a few minutes, until lightly golden.
Sprinkle the grated Louis Cyr cheese over the crostini, then return to the oven for about 2 minutes, just until the cheese has melted.
Transfer the crostini to a serving platter.
Top with grilled peach slices and crumbled Louis Cyr cheese, drizzle with honey, and
garnish with fresh thyme. Serve.
