Ingredients

  • 15 ml (1 tablespoon) olive oil
  • 125 ml (½ cup) thinly sliced dry chorizo sausage
  • 2 pints cherry tomatoes, halved
  • 1 clove garlic, minced
  • 5 ml (1 teaspoon) sea salt
  • Freshly ground black pepper
  • 5 ml (1 teaspoon) honey
  • 30 ml (2 tablespoons) chopped fresh basil
  • 1 baguette, sliced
  • 1 package (170 g) Bergeron Classique Smoked Cheese, cut into small cubes

Preparation

  1. In a non-stick skillet over medium heat, heat the olive oil. Add the slices of chorizo and sauté for a few seconds on each side to brown. Using tongs or a slotted spoon, transfer the chorizo to a plate, making sure to leave the flavored oil in the skillet. Set aside the chorizo.
  2. Return the skillet to medium heat. Add the halved cherry tomatoes, garlic, salt, and pepper. Sauté, stirring regularly, until the cherry tomatoes are softened, about 8 minutes. Add the honey and basil. Remove from heat, add the chorizo, stir to incorporate, then set aside.
  3. Preheat the barbecue to high heat, or a grill pan over high heat. Brush the grill or grill pan generously with oil. Grill the baguette slices and transfer them to a large serving plate. Top the grilled crostini with the warm cherry tomato and chorizo mixture (reheat if necessary), then with cubes of Bergeron Classique Smoked cheese. Serve immediately.
