Ingredients

  • 1 recipe of traditional poutine sauce (see instructions on the right)
  • 1 bag of regular-cut fries
  • 1 pack (400 g) pulled pork in barbecue sauce
  • Brins de Gouda cheese
  • Guacamole
  • Sour cream
  • Cherry tomatoes
  • Fresh cilantro
  • Lime wedges

Preparation

  1. Prepare the traditional poutine sauce as indicated in the recipe, replacing the cloves and bay leaf with the following spices: 5 ml (1 tsp) ground cumin, 3.75 ml (3/4 tsp) dried oregano, and 2.5 ml (1/2 tsp) smoked paprika. Adjust the amount of cayenne pepper according to the desired spice level.
  2. Prepare the fries and pulled pork according to the manufacturer’s instructions.
  3. If desired, grill half the Brins de Gouda in a lightly oiled skillet to make them crispy.
  4. To serve, leave the fries on the baking sheet. Sprinkle the Brins de gouda over the fries, then add the pulled pork. Drizzle with poutine sauce, then garnish with cherry tomatoes and cilantro. Serve with guacamole, sour cream, and lime wedges.
