Baby potatoes

Some seasonings of your choice (garlic salt, dried oregano, paprika, Old Bay, etc.)
Northern shrimp also called Matane shrimp
Le P’tit Bonheur cheese grated

Preheat the oven to 375 °F (190 °C).
Meanwhile, cut the baby potatoes in half and coat them with a bit of olive oil and spices. Place on a baking sheet and bake for about 25 minutes or until tender. Stir frequently.
While the potatoes are cooking, prepare the hollandaise sauce.
Then, grate Le P’tit Bonheur and reserve in a bowl.
Finally, chop the green onions.
Assemble poutines by placing the baby potatoes in bowls, then cover them with hollandaise sauce. Top with shrimp, cheese, and green onions.
