BERGERON-STYLE RACLETTE

Raclette is a comforting dish to warm up during the long winter months! Very popular, this meal requires little preparation. Almost everything can be set up in advance so you can take advantage of your day to do a winter activity or enjoy the presence of your guests.

That way, guests can eat what they prefer, according to their taste and appetite. Adapt the ingredients to suit people with allergies by choosing, for example, lactose-free cheeses and gluten-free bread. For a vegan-friendly version, substitute marinated tofu for the meat!

Raclette is also a good choice for brunchtime. Cook quail eggs quickly on the grill or even small pancakes!

QUANTITIES RECOMMENDED

For one person, the following quantities are recommended:

  • 100 g to 150 g of cheese (2 or 3 varieties)
  • 150 g of deli meats
  • 350 g of potatoes

MEATS AND DELICATESSENS

Consider salami, prosciutto, ham or even chorizo!
Prepare marinated beef flank steak, shrimp, or scallops! Feel free to add game slices or strips to discover new flavours. Fondue meat can also be an easy option.
A selection of pre-cooked or fully-cooked sausages will complement your assortment. Many flavours are now available in grocery stores and specialty stores.

VEGETABLES AND POTATOES

Potatoes are a must for raclette. Choose new potatoes that have been boiled beforehand to make the meal easier to prepare. Chunks of sweet potato or squash are interesting alternatives! Other vegetables such as mushrooms, peppers, broccoli, zucchini, asparagus, cauliflower and bok choy are good choices for side dishes. Don’t forget to blanch firmer vegetables beforehand.

THE EXTRAS FOR A PERFECT RACLETTE

What about sauces? Pick them according to the ingredients you already have on hand. Garlic sauce, Dijon sauce, devil’s sauce, honey-herb sauce, curry sauce, let your creativity flow! Include a few slices of baguette or quality bread. Remember to get gluten-free bread for your guests with gluten intolerance. A green salad or raw vegetables are always appreciated to keep things simple!

WHAT TO DRINK WITH RACLETTE?

White wine: Choose a lightly fruity wine such as a riesling, sauvignon blanc or pinot gris. Look for some acidity to help balance the fat!
Red wine: Choose a fruity, fresh wine since cheese tends to bring out the tannins.
Beer: Look for light, white or blonde beers that are not too sweet. For example, Belgian wheat beers, session IPAs (careful with the bitterness!) or pale ales.

GET A HEAD START: PREPARE YOUR RACLETTE

Cook the sausage pieces. Cut up and marinate meats and seafood—blanch vegetables (broccoli, cauliflower, asparagus, etc.). Preheat the raclette oven 15 minutes before the meal. Enjoy the feast!
