Bergeron Vegetable Pudding

While delectable and full of good food, this different dish is the perfect opportunity to try a new recipe! This delicious vegetable and cheese pudding is perfect for using leftover crusty bread. It can be eaten warm or hot, making it ideal for brunch. Thanks to the taste of Classique Smoked Light cheese, passing vegetables to your kids has never been so easy!

Ingredients

1 chopped large onion

2 diced red peppers

1 tray (227 g) of sliced white mushrooms

6 large eggs

1 cup of milk or vegetable drink

3 cups of bread cut into cubes

2 wedges of 170 g of grated Classique Smoked Light cheese

4 chopped green onions

Instructions
  1. Preheat the oven to 180 °C (350 °F).

  2. Oil a 28 cm × 18 cm (11 in × 7 in) baking dish or 6 to 8 ramekins.

  3. In a lightly oiled skillet, sauté onion, peppers, and mushrooms for 5 to 8 minutes over medium heat.

  4. Meanwhile, in a large bowl, whisk together eggs and milk. Add the bread and half the cheese. Mix gently with a spoon.

  5. Add vegetables. Pour the mixture into the baking dish and cover it with the remaining cheese.

  6. Bake in the middle of the oven for 40 minutes, until the mixture is firm.

  7. Garnish with green onions just before serving. Enjoy!
